DESCRIPTION
Eat and drink like our illustrious winemaker Bryan Currie. BC as he is affectionately known has a great palate and wants you to share in his perspective with wine. A specially curated pairing of 5 dishes created by Muse chefs paired with some of BC’s most enjoyed wines. This is a fixed tasting selection that is by it’s nature GF & DF as BC is. The Winemaker’s Selection is $75 per person and requires at least 24 hours’ notice for booking. It is available Tuesday-Saturday from 12pm.
The Wine Maker’s Selection consists of:
- Sydney rock oysters, Hungerford Hill verjuice, apple and finger lime paired w/ 2023 Classic Semillon
- Murray Cod and miso rillette, yuzu, Avruga and nori rice crackers paired w/ 2022 Classic Fume Blanc
- Mushroom crusted fried chicken wings, smoked celeriac puree paired w/ 2022 HV SV Chardonnay
- Slow cook beef cheek, house made sweetcorn polenta, black garlic and puffed wild rice paired w/ 2021 Epic
- Dark chocolate mousse, whipped coconut, summer berries, crystallised violets, meringue paired w/ 2023 Bot Sem
