• Your culinary journey begins with Top End saltwater crocodile. – Prepared over open flames. Enhanced with the aromatic touch of native pepperberry and paired wild hibiscus jam, Ord Valley dill & kewpie mayonnaise.
• Enjoy a wild-caught barramundi & potato rosti and stack cooked over the coals. – Seasoned with native pepperberry & saltbush & served with tomatoes, a balsamic glaze, a lemon & Kimberley honey drizzle, fresh herbs & Ord River lime.
• Crispy skinned pork belly smoked over Indian Sandalwood embers. – Served with an Ord Valley mango sauce, basil infused damper & a local kapok, chia, melon, mint & rocket salad with a Kununurra Lime dressing.
• The specialty dessert is a warm Ord River rum and chocolate brownie. – Served with vanilla bean ice cream, salted caramel sauce, wild rosella and dusted with powdered boab.
